Helvetia Estate farm is located in the Ilamatepeq Mountain Range, almost 5 kilometers away from the magnificent, tourist town called Concepcion de Ataco, Ahuachapan in the occidental region of El Salvador, located in Central America.
The area’s diverse topography contributes to its unique microclimate, characterized by humidity and tropical conditions. It has 6 natural water fountains located across the farm, which are protected by natural vegetation of the region. Year-round farming operations adhere to a comprehensive ‘work protocol’ that delineates specific tasks aligned with the strategic planning of the plantation
About the producer
The Coffee farm was founded in the 1960s as a Coffee farm located 10 minutes from the tourist town of Ataco. Carmen Elena Calderon de Escalon now owns the farm. Overall, this Medium-sized plantation has 35.29 Hectares and is cultivated with Coffee.
The produced coffee basically undergoes a meticulous process, starting with pulping on the same day it’s harvested. After that, it’s spread out on clay patios to sundry. The coffee beans are cared for with the utmost care, with a hand movement every 30 minutes, amounting to 16 movements per day. Once the fourth day arrives, they are gathered for a night’s rest. This routine continues, with 16 daily movements, until the coffee reaches the optimal humidity level for storage in our warehouse. Producers care to ensure the quality, not only by using moisture measurement equipment but also through a visual inspection to maintain a consistent appearance
