Origin
We already had coffee from the Monteblanco farm in our offer last year, this year it returns to our RARE edition with even more flair! Pink bourbon processed using the Cold Washed method. A floral and tropical blast!
About the Farm
Finca Monteblanco is located in the Cueva de los Guacharos National Natural Park, right in the valley of the Suaza River. The natural landscape, which stretches in all directions, gives the farm a direct connection to the beautiful flora and fauna found there. The farmer who owns the farm, Rodrigo Sanchez, cultivates approximately 14 hectares of land on which he grows primarily Caturra, Bourbon, Pink Bourbon and Geisha varieties.
About the processing
This lot was processed using the Cold Washed method. Perfectly ripe cherries of the Pink Bourbon variety with a sugar content between 24 and 26 BRIX units were placed in refrigerators where they were left to ferment for 72 hours at a very low temperature of around 10 degrees. The cherries were then peeled and the grains with residual pulp were fermented a second time with a specific yeast strain. After fermentation, the coffee was washed and dried on hanging beds.
Taste
Juicy and floral. In the cup you will find flavours of lavender, lemongrass, citrus, mango, passionfruit… There’s a lot of it. The acidity is sparkling, citric and malic, and overall very well structured. The juicy body adds freshness to the coffee. Roasted on a filter.
