About the producer

South American Colombia is not only a land of beautiful landscapes, but also of excellent coffee. Although the Valle del Cauca region has gone through difficult times in the past through armed conflict, today the region is particularly known for its fertility and coffee plantations. The Cauca River, which flows through the valley, provides ideal conditions for growing coffee, and its cornerstone is an environmentally conscious approach to cultivation.

One example is Finca Bet-El in the municipality of Calima, owned by farmer Cesar Ledesma. His farm is characterized by its commitment to preserving and caring for the natural environment. Without the use of pesticides and with an emphasis on economical harvesting and drying practices, the farm has created a harmonious ecosystem where not only different varieties of coffee thrive, but also many animals such as birds.

About the Pink Bourbon

The Pink Bourbon variety in particular attracted attention at last year’s World Barista Championships, taking centre stage in the coffee selection. It has a light pink hue and a complex flavor profile – but its origins remain a mystery. Rodrigo Sanchez Valencia, who was instrumental in its discovery, believes it originated in southern Huila, Colombia. The variety was discovered during a coffee rust epidemic in the 1980s, and it was then that its importance grew thanks to its disease resistance and adaptability. Despite earlier claims that Pink Bourbon is a hybrid, recent research suggests that the variety carries Ethiopian roots, although these have not been officially verified. Pink Bourbon is a challenging variety to grow, requiring careful care and isolation from other varieties, yet it boasts considerable hardiness and productivity. Its cherries, often oblong and orange in color, offer a striking display. On the palate, Pink Bourbon has a citrus-like acidity with floral and honeyed sweetness, notes often compared to washed Ethiopian or Panamanian Geshas. Rodrigo notes its complexity with tropical flavors, peach and floral undertones. The use of different processing techniques, such as cold fermentation or anaerobic processes, enhances its potential and brings out the sweet floral and honey notes. Whether by traditional or innovative methods, Pink Bourbon never ceases to surprise with its versatility and excellent taste.

About the taste

The processing method contributes to the intense and balanced profile with dominant notes of strawberries, apricots and cream that are typical of this Pink Bourbon variety. The lot was carefully hand-picked, fermented for 86 hours and finally sun-dried. The result is a clean cup with a sweet fruity taste and a very pleasant aroma.
